Sweet Seedai / Vella Seedai






Vella Seedai

Rice flour - 1 cup

Jaggery powder ( use only paagu vellam ) –  3/4  cup

Roasted & powdered udad dal  flour - 1 1/2 tsp

White sesame seeds - 1 tsp

Cardamom powder - 1/2 tsp

Butter or ghee - 1 tbsp ( in room temperature )

Dry coconut pieces ( coppara thengai ) -- 1tsp
Water : 3/4 cup

Oil - to deep fry


Dry roast Rice flour for few mts with out changing its colour. Flowing consistency of the flour with be dry and smooth. When it becomes to room temperature, pass it through strainer ( சல்லடை) to remove any lumps. 


Wash and Dry roast sesame seeds till it becomes warm.

Boil jaggery in  water, stirring, till it dissolves completely. ( Or Microwave for a mt in  high ) No need to get any string consistency. Can strain hot jaggery syrup in flour. 

Using ¾ th of  jaggery syrup,  Mix the rice flour , urad dal  flour,….. knead well without lumps when the jaggery syrup is still hot …….. add butter, sesame seeds & cardamom powder and mix well. 


 Add from rest of the jaggery syrup only if it is  required to form a tight dough.   According to the quality of rice flour and jaggery , need of  jaggery syrup differs.




If you have time, Rest for a day.

Next day knead it very well. By this time, dough might have become tight. Still, no need to add water or jaggery syrup.  Form marble size balls carefully. Don't press too much while making balls. 



Deep fry these balls in oil, lowering the fire as soon as the balls are dropped.  Drop one by one. Don't over crowd balls in oil. Don't flip till one side is cooked fully. Cook in lower flame till the bubbles subside completely.  Cook in very very low flame as much as possible.



Note :

·           Soak rice (  maavu  arisi )for 1 hr, drain well & spread on a cloth in shade for 1 hour.

Powder in the mixie, sieve fine(not too fine) & take the sieved flour.
*   You  can  also you store bought Rice flour ( Idiyappam flour )

·        Roast 1 tbsp udad dhal dry on a kadai on  low fire till colour changes & powder fine.

·        If you are using Black sesame seeds fry nicely till they pops.

·        You can add nicely fried coconut pieces also along with the ingredients.
*  If the vella seedai deform and spread in oil , it means you have added extra jaggery syrup.  Add some more roasted rice flour and try again.

* If using fresh grated coconut,  dry fry it , till the moisture goes .
