Kai Murukku




Kai Murukku 


Rice flour - 2 cups (  Flour made our of  Maavu  arisi )

Urad dhal flour – 2 tbsp

Butter – 3tbsp

Hing – 2 pinches

Cumin seeds – 2 tsp

Salt to taste

Oil - to deep fry  ( can use coconut oil / groundnut oil / sunflower oil )

Mix all the ingredients & enough cold water to get a soft dough, without any cracks.

Now the murukkus are “ twisted” with hand, using fingers. ( I am still in the learning process to twist Murukku perfectly )

Make dough into small cylindrical logs , make it easy for you to twist.

Keep a small cap of bottle in the middle.  Grease your hands and Start twisting around the bottle cap ( this is just to get perfect round in shape ) .

Twist the murukku in clean paper or cloth into 3 or 5 or 7 rounds .

 Rest for 10 mts.

Heat the oil.

Carefully flip the murukku into the oil and deep fry in medium flame , turning both sides.

Put few murukku into  the oil at a time . 

They will float in the oil when done.


Now remove to a kitchen tissue.

Store in airtight container.



Note  :          For Rice Flour :  Wash & soak ( Maavu arisi / Patni chawal ) rice for 1 hr.  Drain & dry by spreading in a cloth .  Powder in the mixie & sieve fine.

**   Lightly roast urad dhal & powder it .  Sieve to get fine Urad dhal  powder.
