Ginger Powder / Inji Podi





 

Ginger  Powder  /  Inji  Podi

Ginger  - 1 root / piece  (big size)

Peanut – 4 tbsp
Urad dal / Black gram  - 3 tbsp
Red chilli – 2
Raw Tamarind  -  one betel nut size
Cumin seeds  - 1 tsp
Hing powder --  1 pinch
salt to taste.


Peel and grate the Ginger .  Dry roast all the ingredients separately.  Ginger should be dry fried very lightly, without changing its colour.  Allow to cool.  First grind black gram and chilly then add all the other ingredients and grind coarsely.   Very yummy with hot rice.
