For the
Buns :
1. 5 cup --
Wheat Flour ( Sift twice )
½ cup
-- Maida ( All purpose flour ) (
Sift twice )
1 tsp --
Carrom seeds
1.2 tsp --
Dried Parsley
½ tsp --
Salt
4 tbsp --
Unsalted Butter
1.5 tbsp
Caster Sugar
2 tsp -- Dry
active yeast
¼ cup luke warm milk
½ cup luke warm water
For the
stuffing:
2 -- Potatoes ( boiled and mashed )
1 -- cup --
Veg ( capsicum, carrot,
peas… finely chopped )
1 -- Spring Onion
1 -- Garlic clove, grated
2 -- Green chillies ( finely chopped )
¼ tsp
-- Cumin powder
½ tsp --
Garam masala
1 tsp
-- Amchur powder ( Mango powder ) (or) 1
tbsp lemon juice
2 tbsp
-- Cooking oil
Salt to
taste.

Dissolve Sugar, yeast in milk .
Set aside for 15 mts.

In
a big bowl … first add salt , then both the flours, carom seeds, parsley
powder, butter .... and finally yeast mixture.
·
Mix
and prepare nice elastic dough using warm water. Add warm water little by little … it may take 10 mts to get nice dough.
·
Brush
some oil on all the sides of the dough and also some in a big bowl in which you
are going to keep. Cover the bowl with a
damp cloth and set aside in a warm place for 2 hrs. … Let it rise.
Meanwhile …
lets prepare for stuffing…

In
oil fry chopped spring onion ( bulb part ), garlic till golden brown.

Add
all the other veggies , salt and cook till it is done.
·
Remove
from heat and add chopped green leaves of spring onion , cumin powder, garam
masala and amchur powder. … mix nicely
·
Stuffing
should be dry and should not be wet. …
let it cool.
Once the
dough has risen ,… knead again for 3 to 4 mts.
Divide into
12 equal parts.
Roll each
part like a disc , using rolling pin.
Spoon about
4 or 5 tsp of masala filling into the center and close from all the sides , to
make a stuffed dough ball.
Coat/ brush
the stuffed balls nicely with oil.
Let it rise
in a warm place for 30 more minutes.
Preheat oven
to 190 degree.
Bake for 15
mts in the preheated oven in non-stick oven tray.
Once it is
light brown in colour, brush melted butter on the balls and bake for another 3
to 4 minutes till the top turns in to golden brown.
Let it cool
on the wire rack.
Serve with
ketchup / Sauce.

grams
