Ragi Halwa /Finger Millet Pudding
• 1/2 cup Ragi flour
• 1/2 cup Wheat flour
• 1 cup melted ghee...
• 1 cup sugar
• 1/4 teaspoon cardamom powder
• 1/4 cup cashews
• 2 cups water
1. Melt ½ cup ghee in a heavy bottomed pan , add both the ragi and wheat flours and cashews .
2. Fry them on low heat until you get a roasted aroma.
3. In the meanwhile, in another sauce pan; dissolve the water and sugar. Stir in the cardamom powder to this.
4. Add in the hot sugar water mixture to the roasted flour mix and stir continuously, without lumps, till the water is all absorbed into the flour.
5. Once water gets absorbed, add rest of the ghee, in instalment, one tbsp at a time and keep stirring until you get the right texture.
