Kootu Kari

Kootu Kari, a popular vegetarian Cuisine of Kerala.





Kootu Kari

Ingredients
Chopped  raw banana - 2 nos
Carrots, chopped – 1
Finely Grated coconut - half of a coconut 
Black Chickpea - 100 g  ( soak overnight )
Turmeric powder - ½ tsp
Green chilli - 4  pieces ( chopped finely )
Curry leaves --  few  
Salt to taste
Water --  1 tbsp.
Coconut oil  -- 1 tbsp
Shallots / Small Onion --  2.

In a pressure pan or small cooker ,  pour oil and fry thinly sliced shallots till it becomes crispy.  Remove from pan and keep it aside.  You need this for garnishing.  

Add some water and cook soaked chickpeas .  Drain the water . 

Mix all the ingredients in a cooker including cooked chickpeas  together and cook for a whistle.   

Garnish with caramelized small onions .
