Oats Cookies
Oatsmeal 1/2 cup
Raisins
chopped 1/4 teaspoon
Butter 1/2
cup
Caster sugar 3/4 cup + tablespoon
Maida 3/4 cup + tablespoon
Cooking soda 1/4 teaspoon
Cinnamon
powder 1/2 teaspoon
Lemon rind
grated 1 teaspoon
Honey 1 tablespoon
Milk chilled
2 tablespoons
Method
Preheat oven to 180°C. Grease a baking tray.
Take butter in a bowl and soften it with a wooden spoon.
Add sugar and mix well with the butter. Sift
flour with cooking soda and cinnamon powder into the bowl. Add oatmeal,
chopped raisins, lemon rind, golden syrup and mix. Add chilled milk and mix
into a dough.
Do not knead the dough too much. Take marble
sized portions, roll them into balls and press lightly. Place these on the
greased baking tray keeping sufficient distance between each.
Bake in the preheated oven for about 10 to 15
minutes. Turn them onto a wire rack to cool. Store in airtight tin.
[Note: Keep Lemon in freezer for 1/2 an hr ... to grate lemon rind easily. Grate only yellow portion ... white portion tastes bitter. ]
