DIET Cornflakes Mixture

DIET Cornflakes Mixture

Plain Kellogg’s cornflakes  -- -   2 cups
Thin flattened rice  / Aval / Chiwda  --- ½  cup
Roasted Gram Dal (Pottukadalai) -  Handfull
Peanuts -   Handfull
Cashews – 10
Raisins – 20

Dry coconut slices / Copra / coppara thengai  : 1 tbsp
Curry leaves - a spring
Red Chilli powder – 1 tsp

Salt - to taste
Oil - 1 tsp
Ghee - 1 tsp

 Oven method :

Preheat oven at 180 deg C...

In a non-stick baking tray  spread a layer of corn flakes and bake it at 180 deg C for 3-5 mins stirring every now and then till golden brown, Set aside.

Repeat the process for fried gram dal, Thin Flattened Rice  and peanut each separately . Each ingredients take separate time to get it fried, so check now and then for its doneness while you are stirring.

In a wide pan add a tsp of ghee and fry cashews till golden brown and raisins till it puffs up , set aside. Then in a tsp of oil fry curry leaves till it loses its moisture and becomes transparent along with red chilli powder and salt.

Mix everything including dried coconut slices  and toss until everything nicely coated in the mixture.

Stove top method :

Instead of using Oven , you can also dry fry each ingredients in a pan till it becomes crispy .  While doing so,  stir frequently to get fried evenly.

Variation :

·       Keep curry leaves outside for 2 days in shade area … let it dry …  Microwave it for a minute and crush a little and mix in the mixture , instead of deep fried curry leaves.

·       Dry fry Mint leaves in the same method of Curry leaves and replace curry leaves with crushed mint leaves for a lovely flavor .

·       Can add broken pieces of baked Thattai  with this mixture.

·       Nowadays you get cornflakes in many flavors…  you can use any cornflakes instead of plain one.

·       I like Kellogg’s brand … you can use any brand of your choice.
