Mysore Pak
One of the all time favorite Sweets is Mysore
Pak. It is tasty whether you make it as
crispy, like the one you get in Marriage
Seervarisai or very soft one , like you get it in SriKrishna Sweets Shop.
Here I am giving you the Soft Version of
Mysore Pak. I got this recipe from a
web Site. Though the recipe is done in
OPOS method , I am sharing this recipe for those who doesn’t know how to
release pressure from the Cooker manually.
For Full OPOS Method kindly refer http://www.foodnmoi.com/mysore-pak
Let us see how it is done in traditional
method.
Ingredients
Gram flour
/ Besan : 100 gms
Sugar
: 200 gms
Ghee :
125 ml
Cooking oil
: 3 tsp
Cooking soda
: 1/4 tsp
Water
: 1/4 Cup
In a Big and
thick Pan mix melted Ghee and Gram flour without any lumps . Cook in low flame till the flour changes its
colour and a nice aroma comes. Keep
stirring now and then. Switch it off.
Keep the Ghee
coated deep plate ready.
Meanwhile ,
in another vessel add water , cooking oil and sugar and cook
till string consistency. Take some syrup
carefully using ladle and take a drop of
syrup in your thumb and press it with your index finger and remove …. If you find a thread like consistency between
your fingers, then switch it off. Add Cooking Soda and mix nicely.
Immediately
mix both the sugar syrup and roasted flour without any lumps.
Let it
settle .
After 20
minutes , make a cut marks as squares or diamonds or rectangle slabs using
sharp knife, when the mixture is still warm.
Let it cool
completely.
After a
couple of hours , remove the slices carefully using sharp knife and enjoy the melting
wonder, Mysore Pak .
Note
:
Use Big and
thick bottom Pan . You need enough space
to occupy sugar syrup as well as roasted gram flour and while mixing, the whole
mixture may overflow a bit , so its better to use big pan.
Always
use fresh ingredients for better result.
Freshly Home
made Ghee gives excellent flavor.
