Uppu Seedai / Crispy Snacks

 

Uppu  Seedai 

Rice flour : 1 cup

Urad dal flour :  1 tsp

Butter : 1 tbsp ( at room temperature )

Cold water for kneading.

Hing powder : a pinch

White Sesame seeds : 1 tsp

Salt to taste

        Dry roast rice flour lightly without changing its colour . Let it come to  room temperature.

Dry roast sesame seeds lightly , just to warm it. Let it come to room temperature.

Mix all the ingredients, adding cold water gradually , to make a soft but stiff dough. Dough should not be sticky.
 

Grease your hands with oil and take small portion and Roll  into balls . And place them on paper.

[ While rolling few points to be kept in mind:

1. It should not be rolled tightly

2. Roll it into small

3. It should not be perfectly round in shape but it should be uniform in size .

4. Keep away the rolled seedais from ant, dust etc. ]

 

Let it be for 10 mts on paper .  [Balls should not be wet, so let it dry for 10 mts. ]
 

Drop balls in hot oil and at once reduce the flame to low.

 [ Don’t add just very few balls as it may cause bursting .  Adding more number of seedai at once will drop the temperature of oil quickly and hence bursting can be avoided. ]

Turn them frequently until all the bubbles stop almost completely.
 
 

Remove and drop on tissue paper to absorb excess oil.

Store Crispy Seedais in air tight container.
