Sweet diamond biscuits
 

Shankarpali / Sweet Diamond Biscuits

 

These biscuits will be mild in sweet ,  crispy and very easy to prepare.

 

Maida : 1 cup

Sugar powder : ¼ cup

Water as required.

Ghee : 2 tsp

Baking soda : 1 pinch ( optional )

Oil for deep frying.

 

Mix all the ingredients to form a dough like we do for roti . 

Rest it for 15 mts.

Divide the dough into balls . 
 
 
 
 Now roll each ball like thin roti …  use maida for dusting to avoid sticking roti while rolling . Don't bother about the shape , any way , we are going to cut it.  
 
 

Using knife or designer spoon cut the roti into diamond like shape.

 For that first cut into horizontal or vertical  lines , as strips and then start cutting as slanting lines on the roti using knife, which gives you diamond shape pieces.
 
 

Now heat oil …  check by dropping a piece of diamond in hot oil and if it raises immediately, the oil is ready to fry.

Now turn the flame into low and drop as much diamonds as possible in the oil to get it fried.

Keep frying in low flame and flip to fry on both sides equally.

When the biscuits becomes light brown in colour…  it should become crispy.

Don’t fry in hot oil as the biscuits may turn brown in colour quickly but not turn into crispy .

Remove the diamond biscuits and repeat the process till the dough finishes..   and when it comes to room temperature , store it in air tight box.

You can also add this biscuits along with the other items in Mixture.
