Onion Flattened rice Upma / Vengaya Aval  Upma / Khanda Poha

 

Flattened rice : 2 cup ( thin variety )

Onion : 1 ( chopped )

Green chilly : 1+ ½  or 2 ( chopped )

Turmeric powder : 2 pinches

Salt to taste

Sugar : 2 pinch

Oil : 2 tbsp

Peanuts : 1 tbsp

Bengal gram : 1 tsp

Curry leaves : few
 
 

          In oil temper with mustard and peanuts … when mustard seeds starts popping , add Bengal gram . 
 When the Bengal gram turns into golden brown, add green chilly, onion, curry leaves and fry till onion turns into translucent . Add turmeric powder, sugar and salt and give a stir.  

Meanwhile fill drinking water in vessel containing the flattened rice … rinse and immediately drain the water .  Don’t allow it to soak.

Add the rinsed flattened rice with  the tempered ingredients and mix well and  Switch off.

Serve with Sambar / Chutney.

 

Variation:

·       You can use thick variety of poha / flattened rice , which needs soaking time of 2 mts.   Rest are same procedure.

·       You can omit Onion for Jain version.

·       You can add lemon juice at the end for tangy taste.  You may need to increase quantity of chilly. 

·       You can add grated coconut for garnishing

·       You can add boiled carrot, peas, potato , which can be added after tempering.

·       Instead of dipping in drinking water , you can dip the flattened rice in tamarind diluted water to make it as Puli Aval Upma .  Increase quantity of green chilly or red chilly .
