Dosa / Dosai Batter






                                                                  Dosa  Batter

 

Idly  Rice :  2 cups

Raw  Rice :  2 cups

Urad dal /  Black gram dal  : 1 cup

Tur dal /  Red gram dal : 2 tbsp

Fenugreek seeds :  4 tsp

Salt to taste.

 

          Soak  Rice, Tur dal and Fenugreek seeds for 4 hrs.

Soak Urad dal in 3 cups of water  for  half an hour.

In wet grinder first grind Urad dal using the water in which it is soaked.  Add water gradually while grinding.  Grind it for ½ an hour or till it becomes very smooth.

Remove dal batter from grinder. 

Add Rice mixture in the grinder and grind it for 20 mts adding required water,  till it becomes fine coarse batter.

Mix  Rice batter +  Urad dal batter + salt and give a nice stir using hands.

Vessel should be tall enough to have space for fermentation.

Let dosa batter ferment for  8 to 10 hrs.

Fermentation helps in digestion and also gives soft dosas… So don’t skip fermentation.

Serve hot with Sambar Chutney  /  Milagai  Podi.  


Grinding Dosa batter in Mixie. 

* If you are grinding batter in mixie , use Idly rice : Raw rice : Beaten rice : Urad dal in the ratio of 2 : 1 : 1 : 1 ., along with fenugreek seeds, Tur dal.

 * Use ice cold water while grinding in mixie , so that the mixie will not get heated up.

Lets see how can a dosa batter can be changed into many avatar.  

 

Paper Roast :  In Dosa tawa Spread dosa batter very thinly .  Cook only on one side.  Use generously oil / ghee while cooking . Flip and serve hot immediately.
 

 

Cone Dosa :  Prepare the same way as paper roast … just  before taking dosa from the tawa , slit half a diameter of the dosa circle and start folding in circular motion to form a triangle / cone shaped Dosa.  Serve immediately.


 
Masal  Dosa : Prepare  like paper roast dosa using ghee and cook only for one side.  Before removing from tawa , place 2 tbsp. of Potato Masala in the center and fold .  Serve hot.  



Soft Dosa :  Spread medium think dosa batter on tawa … cook on both side.  Keep it in hot pack till it is served.  You can add finely chopped veggies of your choice in batter.  Ideal for tiffin box.
 

 

Oothappam :  Spread thick batter on tawa … cook in low flame on both sides till it cooks properly. 
After spreading batter on tawa , sprinkle finely chopped veggies of your choice  and press gently .  Pour oil around dosa and sprinkle few drops on top too.   Flip and cook on the other side .   Ideal for tiffin box.
 
 
 
 
Mix  Veg  Oothappam :   Mix  finely chopped Onion , Carrot ,  Green / Red / Yellow Bell Pepper ,  Coriander  leaves  ,  green chilly , some salt and mix nicely .  After spreading thick batter on tawa , sprinkle  chopped veggies mix and press gently .  Pour oil around dosa and sprinkle few drops on top too.   Flip and cook on the other side .   Ideal for tiffin box.
