Bajji  ( Assorted )

 

Bajji is a very tasty and easy to prepare evening snack.

It can be done using Onion / Potato / Capsicum / Brinjal / Raw Banana / Bajji Milagai ( Big chilly )

 

Here, I have used assorted veggies … you can use one or more veggies of your choice.

 

Chick Pea flour : 1/2 cup  

Rice flour : 1/2 cup

Ghee : 1 tsp

Red chilly powder : 1 + ½ tsp

Tandoori Masala : 1 tsp ( optional )

Turmeric powder : 2 pinches

Salt to taste

 

Veggies needed :

Onion : 1 Big ( thinly sliced )

Potato : 1/2 ( skin peeled and thinly sliced )

Big Brinjal : 2 big thin slices

Raw Banana : 2 slices ( length wise )

Bajji Milagai :  4 ( carefully slit and remove seeds )

 

First prepare bajji batter.

Mix all the ingredients given by gradually adding water.

Let the batter be like dosa batter.
 
 

Now start slicing veggies .
 
 

Potato, brinjal , raw banana turns dark in colour when kept outside … so after slicing put them in batter .

Keep the sliced onion aside.

Don’t cut Milagai bajji … just removing seeds will do. 

 

Heat the oil in broad and deep pan…  when it is ready check by dropping a drop of bajji batter in oil…

It will raise immediately.

Turn the flame to medium heat.

Start removing the sliced veggies from the bajji batter and put them in oil ,  just to fill the surface of the oil..

Flipping both the sides , fry them till they becomes golden in colour.

Do the rest of the veggies in same way.

Dip the Milagai bajji and onions too in the left over bajji batter and fry them in the same way.

Remove the Bajjis and keep it in the kitchen tissue paper and serve them hot.

It’s an excellent evening snack with Coffee or Tea.

 

·       You can also stuff the Milagai Bajji , after removing seeds , with cooked dry vegtables.   Make sure , the stuffing will not spill in oil while frying .  Seal the opening nicely with batter.

·       In this recipe , I didn’t use Cooking Soda ( I prefer not to use ).  But,  If you wish , you can add 2 pinches of cooking soda for a fluffy Bajji.
