Lemon Pickle






                                                               Lemon pickle

Lemon pieces         :    1 cup ( chopped )

Chilly powder         :    ¼ cup

Salt                           :    2 tbsp

Turmeric powder   :    ½  tsp

Mustard seeds       :     1 tsp

Hing powder          :    2 pinches

Fenugreek powder  :   2 pinches 

Gingelly oil             :    2 tbsp

Green chilly           :    2 tsp ( chopped )

Ginger                     :   1 tsp ( chopped )

     In a pan temper with mustard seeds . when it started popping , reduce the flame to low, add green chillies and ginger ,  stir fry for few mts without changing colour of  Ginger .  Finally add hing powder .  Give a stir.

Switch off and let it cool.

In hot water soak lemon for half an hour. 

Drain water completely,  wipe it perfectly dry. 

Cut lemon and remove seeds.

On top of lemon pieces add turmeric powder,  fenugreek powder , chilly powder and salt . 

Add tempering and mix everything nicely

Twice a day stir pickle nicely with clean and dry spoon.

It will get ready in a week.

After a week of time, you can refrigerate it.
 
[Note :  you can skip soaking lemon in boiling water and add ingredients with chopped lemon.  This will last long for yrs.  But it will take at least a month to get ready.]
