Ennegayi / Brinjal Gravy ... Karnataka Style




Ennegayi / Brinjal  Gravy ….  Karnataka Style.

 

1 Big Brinjal  ( chopped)

2 tsp White Sesame seeds

2 tsp Coriander seeds

6-7 dry red chillies

¼ cup Grated fresh coconut

2 tbsp Fried Gram ( Pottukadalai )

4 tbsp Oil

1 tsp Mustard seeds

Few curry leaves

A pinch of hing

Salt to taste

2 Cups Water

 Dry  roast  sesame seeds, coriander seeds and dry red chillies. Cool and grind to a fine powder . Add grated coconut and fried gram and make a smooth paste using water as required.


     Heat oil in a pressure pan.  Add the mustard seeds,.

 When the mustard begins to splutter add hing , curry leaves ,  ground masala paste and fry for 2-3 minutes. Add all the other ingredients and  close the lid and Cook for a whistle.

Allow standing time for 20 mts.

Goes well with Akki Roti.

 

[ Note:  Usually , it is done using small brinjals .  Replace 1 big brinjal with , 8 small Slit intact brinjals.  Stuff some  ground paste inside to get nice flavor ]
